Baby Daddy Week 1

My first week as full-on baby daddy was pretty good. There was only one goal we didn't accomplish (attending a friend's wedding). Other than that, we did really well with eating and sleeping and doing all things baby. I also managed to cook quite a bit. Below is a small selection of dishes I made. These were all from Sunday night.

Ciabatta Bread (1 of 2 loaves):



My own "creation" called Frango Portugal. Inspired by our trip last year to Portugal where we often ate meals with simple ingredients put together and cooked in an unadorned fashion, but that tasted really good. One of those was baked chicken with vegetables. For this round, I put in potatoes, green beans, onions, and carrots. There's also some garlic cloves in it. The chicken has skin and bones and I put salt and pepper under the skin on both sides. Then I drizzle the whole thing with olive oil and a bit of honey. Finally I splash the whole thing with a little white wine vinegar and bake it covered for an hour and a half. It was really, really good.



Finally, there was the cherry pie. This turned out to be a tasty mess. The cherry filling is really watery and the crust didn't cook all the way through in the middle as a result. Oh, and I made the crust too. It's not quite as yellow as this picture would indicate. It was my second pie of the week. My first was an apple pie and that came out spectacularly well.



I also cooked an Indian dish called Aloo Mutter Gobi and made H's Gazpacho recipe. And the old standby of rice and beans (a recipe from the Goya can of black beans, which you can actually get online now. It's really good).

So, I've become very domestic very fast. Who knew that would happen.

Side note: in case you are wondering, my new favourtie website is AllRecipes.com. It's where I found a lot of info the baking I did this past week. I've also found a bunch of other things I was to try. There's a lot of similar recipe websites out there too, though. It's way easier than pouring through books and magazines to find ideas too.

      I think it was my sudden nesting instinct. Plus a desire to yet again avoid doing my taxes (I really will have to get to that someday. It's been since 2006 after all. But it does give one pause to think that if it takes me that long to do my taxes, it's not surprising that I only post entries every few months).

There is really not much in the way of vegetarianism in Europe, so in order to just eat we end up having to cheat. Plus we like tasting the local delicacies. Since that often involves meat, it is what it is. Then we wanted to make sure that H was getting a proper amount of protein during the pregnancy (a time in life when actually do need a high level of protein), so some meat was brought into the house.

      After all that, I ended up going on a bit of a meat binge, which made me feel pretty awful after about a month. I've really cut back again, but I still do enjoy a little chicken sometimes.

I also get a score on "plating," but that doesn't really count towards anything.
